This recipe is very close to my heart as it has two of my favourite ingredients, lentils and artichokes. I initially made this as a side dish for a barbecue but you can have it even as a main course with some added greens and grilled chicken or tofu bites on top. It is a nutritious and flavorful dish that’s perfect for any occasion. Whether you’re looking for a light lunch or a healthy side dish for dinner, this salad packs a punch with its vibrant flavors and crunchy texture garnished with spring onions or arugula leaves. Lentils are not only delicious but also an excellent source of protein and fiber, making them a staple in many healthy diets.

Benefits of Green Lentils and Artichokes
One of the key ingredients in this salad is green lentils, which are known for their robust flavor and firm texture. Adding artichokes to the mix not only enhances the flavor but also boosts the nutrition profile. Artichokes are rich in antioxidants and contribute to heart health, making your green lentil salad not just tasty, but also a powerhouse of nutrients. I use a simple dressing of olive oil and lemon juice with some salt added. I later added some chilly flakes to give a little bit of excitement to the flavour.
How to Prepare Your Salad
