Green lentil salad with artichokes

- 3 tbsp olive oil
- 300 grams green dry lentils
- 8 pieces artichoke hearts canned or anti-pasti
- 1 tbsp lemon juice
- 2 stalks spring onion chopped
- 1 tsp ground cumin

To prepare your green lentil salad with artichokes, start by cooking the lentils according to the package instructions in water with a little bit of cumin.
Once cooked, rinse them and let them cool before mixing with chopped artichokes, and spring onions. Canned lentils are also perfectly fine if you want a faster preparation time.
You can also add diced tomatoes, and a handful of fresh herbs like parsley or basil.
Drizzle with olive oil and squeeze fresh lemon juice on top for an extra zing. Toss everything together, season to taste, and your salad is ready to be served.
